6 hard-boiled eggs, peeled and halved 2 large onions, finely chopped 2 tomatoes, finely chopped 1/4 cup vegetable oil 1 teaspoon ginger-garlic paste 1 teaspoon cumin 1 teaspoon coriander powder 1/2 teaspoon turmeric powder 1/2 tsp red chilli powder (as per taste) 1/2 tsp garam masala salt to taste fresh coriander for garnishing
Prepare the eggs: Boil the eggs until hard boiled. After cooking, cool them, peel them and cut them in half. Make the curry base: Heat vegetable oil in a pan on medium flame. - Add cumin and let it crackle. Add finely chopped onion to it and fry until it turns golden brown. Add ginger-garlic paste: Add ginger-garlic paste and fry for a minute until the raw smell disappears. Add spices: Add coriander powder, turmeric powder, red chilli powder and salt. Stir well and cook for 2-3 minutes.
